Ingredients
- 0.25 cup kosher salt
- 2 tablespoons sweet paprika
- 1 tablespoon smoked paprika
- 1 teaspoon ground chipotle chile pepper
- 2 tablespoons dried onion
- 4 whole whole bay leaves
- 1 tablespoon ground cumin
- 1 tablespoon oregano
- 1 teaspoon ground coriander seeds
- 1 teaspoon dried thyme
- 0.5 teaspoon white pepper
- 1 teaspoon celery salt
- 2 tablespoons extra virgin olive oil
- 2 pounds yukon gold potato
- 1 sprig fresh rosemary
Instructions
- 1Finely grind the whole bay leaves into a powder using a spice grinder or mortar and pestle.
- 2In a small bowl, combine the ground bay leaves with kosher salt, sweet paprika, smoked paprika, ground chipotle chile pepper, dried onion, ground cumin, oregano, ground coriander seeds, dried thyme, white pepper, and celery salt. Mix well to create the Sazón para Papas blend.
- 3Wash and cut Yukon gold potatoes into 1-inch cubes. In a large bowl, toss the potato cubes with extra virgin olive oil and 2-3 tablespoons of the Sazón para Papas blend, ensuring all potatoes are evenly coated. Add the fresh rosemary sprig if desired.
- 4Spread the seasoned potatoes in a single layer on a baking sheet. Roast in a preheated oven at 400°F (200°C) for 30-40 minutes, flipping halfway, until golden brown and tender-crisp.
