Ingredients

  • 1 small wheat bread
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 12 ounces shrimp
  • 1 tablespoon lemon juice
  • 2 tablespoons parsley
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Slice the whole grain baguette into thin pieces and lightly brush each side with olive oil.
  3. 3Bake baguette slices for 10 minutes, or until crisp and golden.
  4. 4While the bread is baking, heat the remaining olive oil in a skillet over medium heat.
  5. 5Add minced garlic to the skillet, sautéing until fragrant, about 1 minute.
  6. 6Add the shrimp to the skillet, season with salt and pepper, and cook until they turn pink, about 2-3 minutes per side.
  7. 7Stir in lemon juice, chili flakes, and half of the parsley, cooking for an additional minute.
  8. 8Arrange the toasted baguette slices on a serving platter.
  9. 9Top each bread slice with shrimp and a spoonful of the garlic-lemon sauce from the skillet.
  10. 10Garnish with the remaining parsley before serving.
  11. 11Serve immediately while warm.
