- 1 small wheat bread
- 2 tablespoons olive oil
- 3 cloves garlic
- 12 ounces shrimp
- 1 tablespoon lemon juice
- 2 tablespoons parsley
- 0.5 teaspoon red pepper flakes
- 1 teaspoon sea salt
- 0.5 teaspoon black pepper
Instructions
- 1Preheat oven to 375°F (190°C).
- 2Slice the whole grain baguette into thin pieces and lightly brush each side with olive oil.
- 3Bake baguette slices for 10 minutes, or until crisp and golden.
- 4While the bread is baking, heat the remaining olive oil in a skillet over medium heat.
- 5Add minced garlic to the skillet, sautéing until fragrant, about 1 minute.
- 6Add the shrimp to the skillet, season with salt and pepper, and cook until they turn pink, about 2-3 minutes per side.
- 7Stir in lemon juice, chili flakes, and half of the parsley, cooking for an additional minute.
- 8Arrange the toasted baguette slices on a serving platter.
- 9Top each bread slice with shrimp and a spoonful of the garlic-lemon sauce from the skillet.
- 10Garnish with the remaining parsley before serving.
