Ingredients
- 2 cups chickpea
- 1 cup wheat breadcrumbs
- 1 tbsp paprika
- 2 cloves garlic
- 0.5 cup red onion
- 0.25 cup parsley
- 2 tbsp lemon juice
- 1 tsp cumin
- 1 tsp coriander
- 0.5 tsp salt
- 0.25 tsp black pepper
- 2 tbsp olive oil
- 4 pieces wheat bread
Instructions
- 1Rinse and drain the chickpeas thoroughly.
- 2In a food processor, combine chickpeas, garlic, red onion, parsley, lemon juice, smoked paprika, cumin, coriander, salt, and black pepper. Pulse until mixture is coarsely ground.
- 3Transfer mixture to a bowl and fold in whole wheat breadcrumbs until the mixture is firm enough to form patties.
- 4Form the mixture into 4 equal-sized patties.
- 5Preheat a skillet over medium heat and add olive oil.
- 6Cook the patties for about 5 minutes on each side, or until they are golden brown and cooked through.
- 7Toast the whole wheat buns lightly.
- 8Serve the chickpea burgers on toasted buns with your choice of Mediterranean-inspired toppings, such as sliced tomato, lettuce, and tahini sauce.
