Ingredients
- 14 oz extra firm tofu
- 0.25 cup extra virgin olive oil
- 0.25 cup lemon juice
- 1 tsp lemon zest
- 2 cloves garlic
- 2 tbsp parsley
- 1 tbsp fresh thyme leaves
- 1 tsp oregano
- 0.5 tsp smoked paprika
- 1 tsp salt
- 0.5 tsp black pepper
- 1 medium zucchini
- 0.5 medium red onion
- 1 medium green bell pepper
- 1 medium yellow bell pepper
- 1 cup cherry tomatoes
- 8 count wooden skewers
Instructions
- 1Whisk together olive oil, lemon juice, lemon zest, minced garlic, parsley, thyme, oregano, smoked paprika, salt, and pepper to create the marinade.
- 2Combine cubed tofu, zucchini, red onion, bell peppers, and cherry tomatoes in a bowl with the marinade. Toss gently to coat and marinate for at least 30 minutes, or up to 2 hours.
- 3Thread the marinated tofu and vegetables alternately onto the soaked wooden skewers.
- 4Grill skewers over medium-high heat for 10-15 minutes, turning occasionally, until vegetables are tender-crisp and tofu is lightly charred.
- 5Serve immediately.
