Ingredients

  • 12 ounces wheat spaghetti
  • 2 pounds clams
  • 2 tablespoons olive oil
  • 6 cloves garlic
  • 1 cup white wine
  • 1 cup cherry tomatoes
  • 0.5 cup parsley
  • 1 teaspoon lemon zest
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

Instructions

  1. 1Clean the clams in cold water, scrubbing the shells to remove any dirt.
  2. 2Cook whole wheat spaghetti in salted boiling water until al dente, then drain.
  3. 3In a large skillet, heat olive oil over medium heat. Add minced garlic and chili flakes, sautéing until fragrant.
  4. 4Add the clams to the skillet, cover, and cook until the clams open, about 5-7 minutes. Discard any clams that do not open.
  5. 5Pour in dry white wine, add cherry tomatoes, and simmer for 3 minutes to allow the alcohol to evaporate.
