Ingredients
- 6 large eggs
- 2 tablespoons olive oil
- 600 grams potatoes
- 1 large onion
- 2 cups spinach
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- 1Preheat a non-stick frying pan over medium heat and add 1 tablespoon of olive oil.
- 2Thinly slice the potatoes and onion, then add to the pan, cooking until tender, about 10 minutes. Stir occasionally to prevent sticking.
- 3In the meantime, whisk the eggs in a large bowl until frothy.
- 4Stir in the cooked potatoes and onions, fresh spinach, salt, and pepper into the egg mixture.
- 5Add the remaining tablespoon of olive oil to the pan. Pour in the egg mixture, spreading it evenly.
- 6Cook over low heat until the edges start to set, about 5 minutes.
- 7Place a plate over the pan, carefully flip the tortilla onto the plate, then slide it back into the pan to cook the other side.
- 8Cook for another 3-4 minutes until fully set.
- 9Transfer the tortilla to a cutting board, let it cool for a few minutes, then slice into wedges.
- 10Serve the tortilla warm or at room temperature, garnished with a sprinkle of fresh herbs if desired.
