Ingredients

  • 6 large eggs
  • 2 tablespoons olive oil
  • 600 grams potatoes
  • 1 large onion
  • 2 cups spinach
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions

  1. 1Preheat a non-stick frying pan over medium heat and add 1 tablespoon of olive oil.
  2. 2Thinly slice the potatoes and onion, then add to the pan, cooking until tender, about 10 minutes. Stir occasionally to prevent sticking.
  3. 3In the meantime, whisk the eggs in a large bowl until frothy.
  4. 4Stir in the cooked potatoes and onions, fresh spinach, salt, and pepper into the egg mixture.
  5. 5Add the remaining tablespoon of olive oil to the pan. Pour in the egg mixture, spreading it evenly.
  6. 6Cook over low heat until the edges start to set, about 5 minutes.
  7. 7Place a plate over the pan, carefully flip the tortilla onto the plate, then slide it back into the pan to cook the other side.
  8. 8Cook for another 3-4 minutes until fully set.
  9. 9Transfer the tortilla to a cutting board, let it cool for a few minutes, then slice into wedges.
  10. 10Serve the tortilla warm or at room temperature, garnished with a sprinkle of fresh herbs if desired.
