Ingredients
- 3 tablespoons olive oil
- 600 grams yellow potatoes
- 2 onion
- 6 eggs
- 1 teaspoon sea salt
- 0.5 teaspoon black pepper
- 2 tablespoons parsley
- 2 cloves garlic
Instructions
- 1Peel and thinly slice potatoes and onions. Mince garlic.
- 2Heat 2 tablespoons of olive oil in a non-stick frying pan over medium heat. Add the potatoes, onions, and a pinch of salt, cooking until the potatoes are tender, stirring occasionally.
- 3In a large bowl, whisk the eggs with sea salt and black pepper.
- 4Add the cooked potatoes and onions to the egg mixture, letting it sit for 10 minutes.
- 5Heat the remaining olive oil in the pan. Add the egg and potato mixture, spreading it evenly.
- 6Cook over low heat until the eggs are set and the bottom is golden brown, about 10 minutes.
- 7Place a large plate over the frying pan and carefully flip the tortilla onto the plate.
- 8Slide the tortilla back into the pan to cook the other side, about 3-5 minutes.
- 9Slide the finished tortilla onto a plate, letting it cool slightly.
- 10Garnish with chopped parsley and additional black pepper to taste.
- 11Cut into wedges and serve warm or at room temperature.
