- 1 pound lamb
- 1 cup grain couscous
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon coriander
- 0.5 teaspoon cinnamon
- 2 tablespoons olive oil
- 2 cloves garlic
- 1 medium onion
- 1 cup cherry tomatoes
- 0.25 cup parsley
- 1 teaspoon lemon zest
- 2 cups chicken broth
Instructions
- 1Cook whole grain couscous according to package instructions using chicken broth instead of water for added flavor. Set aside.
- 2Heat a large skillet over medium heat and add one tablespoon of olive oil.
- 3Add minced garlic and diced onion to the skillet, sautéing until translucent.
- 4Incorporate the lean ground lamb into the skillet, breaking it apart with a spoon.
- 5Season the lamb with cumin, smoked paprika, coriander, and cinnamon. Cook until the lamb is browned.
- 6Reduce the heat to low and let the lamb simmer for 10 minutes, allowing the flavors to meld.
