Ingredients

  • 12 pieces pasta shells
  • 2 cups spinach
  • 1.5 cups ricotta cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 0.25 teaspoon nutmeg
  • 0.5 cup parmigiano reggiano
  • 0.5 teaspoon salt
  • 0.25 teaspoon peppers

Instructions

  1. 1Preheat the oven to 375°F (190°C).
  2. 2Bring a large pot of salted water to a boil. Add the pasta shells and cook until al dente. Drain and set aside.
  3. 3In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  4. 4Add spinach to the skillet and cook until wilted. Remove from heat and let cool.
  5. 5In a mixing bowl, combine the ricotta cheese, cooled spinach, grated nutmeg, and a pinch of salt and pepper.
  6. 6Fill each pasta shell with the spinach and ricotta mixture and place in a baking dish.
  7. 7Drizzle the remaining olive oil over the stuffed shells and sprinkle with Parmesan cheese.
  8. 8Bake in the preheated oven for 25-30 minutes, or until the tops are lightly browned and the cheese is bubbly.
  9. 9Let cool for a few minutes before serving.
  10. 10Serve warm, garnished with additional Parmesan cheese if desired.
