Ingredients

  • 2 fillets tilapia fillets
  • 5 tbsp unsalted butter
  • 2 tbsp fresh chives
  • 2 cups green beans
  • 0.5 tsp salt
  • 0.5 tsp garlic powder
  • 2 cups water
  • 1 small shallot
  • 1 tbsp canola oil
  • 1 tsp parsley flakes
  • 0.25 cup whipping cream
  • 1 tsp arrowroot powder
  • 1 rib celery rib
  • 0.25 cup leeks
  • 1 tsp rice vinegar
  • 0.5 tsp poppy seeds

Instructions

  1. 1Season tilapia fillets with 1/4 tsp salt and garlic powder. Prepare a steamer with 2 cups water.
  2. 2Steam green beans, diced celery, and sliced leeks for 5-7 minutes until tender-crisp. Add seasoned tilapia to the steamer and cook for another 5-8 minutes, or until fish is opaque and flakes easily.
  3. 3While fish steams, melt 4 tbsp unsalted butter with Canola Oil and minced shallot in a small saucepan over low heat. Stir in arrowroot powder, then whisk in whipping cream and rice vinegar. Cook gently until slightly thickened. Stir in fresh chives and remaining 1/4 tsp salt.
  4. 4Plate the steamed fish and vegetables. Spoon the butter sauce over the fish. Garnish with parsley flakes and poppy seeds.
