Ingredients
- 2 cups parsley
- 1 cup tomatoes
- 1 cup cucumber
- 0.5 cup mint
- 0.5 cup bulgur
- 3 tablespoons lemon juice
- 2 tablespoons olive oil
Instructions
- 1Prepare the bulgur wheat according to package instructions. Allow to cool.
- 2Finely chop the parsley and mint. Place them in a large mixing bowl.
- 3Dice the tomato and cucumber into small, bite-sized pieces. Add to the bowl with herbs.
- 4Once the bulgur wheat is cooled, fluff it with a fork and add it to the salad bowl.
- 5Drizzle the fresh lemon juice and extra virgin olive oil over the salad.
- 6Gently mix all the ingredients until well combined.
- 7Season the salad with salt and pepper to taste.
- 8Let the salad sit for at least 10 minutes to allow the flavors to meld.
- 9Give the salad one final stir, then garnish with additional parsley and mint if desired.
- 10Serve the tabouli salad chilled or at room temperature.
