Ingredients

  • 1 lb pork tenderloin
  • 8 pieces corn tortillas
  • 0.5 cup pineapple
  • 0.25 cup red onion
  • 0.25 cup cilantro
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper

Instructions

  1. 1Cut lean pork tenderloin into thin slices.
  2. 2Marinate pork slices in a mixture of lemon juice, olive oil, minced garlic, cumin, paprika, oregano, sea salt, and black pepper for at least 30 minutes or overnight in the refrigerator.
  3. 3Preheat grill to medium-high heat.
  4. 4Grill marinated pork slices for 2-3 minutes on each side or until fully cooked.
  5. 5Warm corn tortillas on the grill for about 30 seconds on each side.
  6. 6Chop pineapple and red onion into small pieces.
  7. 7Chop fresh cilantro.
  8. 8Assemble tacos by placing grilled pork on corn tortillas, and top with pineapple, red onion, and cilantro.
  9. 9Serve immediately.
  10. 10Optional: Serve with a side of green salad dressed with olive oil and lemon juice to complement the Mediterranean diet.
