Ingredients
- 400 grams shrimp
- 100 grams cheese
- 2 medium tomatoes
- 2 medium chiles
- 8 pieces corn tortillas
- 2 tablespoons olive oil
- 2 cloves garlic
- 1 medium onion
- 0.5 cup cilantro
- 1 piece lime
Instructions
- 1Preheat a grill pan over medium heat.
- 2Clean the shrimp and pat dry.
- 3Dice the tomatoes, chiles, onion, and garlic finely.
- 4In a bowl, mix the shrimp with half the olive oil, garlic, and a pinch of salt.
- 5Grill the shrimp for 2-3 minutes on each side, or until cooked through.
- 6Remove shrimp from the grill and set aside.
- 7In the same pan, add the remaining olive oil and sauté the onion and chiles until soft.
- 8Add the tomatoes and cook until they release their juices.
- 9Chop the grilled shrimp and return to the pan, mixing with the vegetable mixture.
- 10Warm the tortillas on the grill for about 30 seconds on each side.
- 11Assemble the tacos by placing the shrimp and vegetable mixture on each tortilla, topping with low-fat cheese.
- 12Garnish with fresh cilantro and lime juice before serving.
