Ingredients
- 1 cup espresso
- 24 pieces ladyfingers
- 8 ounces mascarpone cheese
- 3 large eggs
- 2 tablespoons cocoa powder
- 1 teaspoon vanilla extract
- 3 tablespoons honey
- 1 ounce dark chocolate
Instructions
- 1Prepare espresso and let it cool to room temperature.
- 2Separate egg whites and yolks into two bowls.
- 3Beat egg yolks with honey and vanilla extract until light and fluffy.
- 4In another bowl, gently fold mascarpone cheese into the egg yolk mixture.
- 5Beat egg whites until stiff peaks form, then fold into the mascarpone and egg yolk mixture.
- 6Dip ladyfingers quickly into the espresso, ensuring they are moist but not soggy.
- 7Layer the soaked ladyfingers at the bottom of each cup.
- 8Spoon a layer of the mascarpone mixture over the ladyfingers.
- 9Repeat the layering process until cups are filled, finishing with a mascarpone layer.
- 10Dust the top with cocoa powder.
- 11Shave dark chocolate over the top for garnish.
- 12Chill in the refrigerator for at least 2 hours before serving.
