Ingredients
- 4 whole tomatoes
- 200 grams tuna
- 1 small red onion
- 1 tablespoon capers
- 2 tablespoons basil
- 1 tablespoon black olives
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 tablespoon parsley
Instructions
- 1Slice the tops off the tomatoes and carefully hollow out the insides, reserving the pulp for another use.
- 2In a mixing bowl, flake the tuna with a fork and combine with finely chopped red onion, capers, chopped basil, and sliced black olives.
- 3Add lemon juice, extra virgin olive oil, salt, and black pepper to the tuna mixture. Stir to combine.
- 4Taste the filling and adjust the seasoning if necessary.
- 5Spoon the tuna mixture into the hollowed-out tomatoes.
- 6Garnish the top of each tomato with a sprinkle of chopped parsley.
- 7Chill the stuffed tomatoes in the refrigerator for at least 20 minutes before serving to allow the flavors to meld.
