- 1 medium yellow onion
- 2 medium carrot
- 2 medium celery
- 3 pieces garlic
- 2 cups cannellini beans
- 2 cups kale
- 1 cup grain pasta
- 6 cups vegetable broth
- 1 can tomatoes
- 1 tbsp rosemary
- 1 tsp thyme
- 1 tsp salt
- 0.5 tsp black pepper
Instructions
- 1Heat olive oil in a large pot over medium heat.
- 2Add chopped onion, carrots, and celery to the pot, cooking until softened, about 5 minutes.
- 3Stir in minced garlic and cook for another minute until fragrant.
- 4Pour in vegetable broth and bring to a simmer.
- 5Add diced tomatoes, cannellini beans, rosemary, and thyme to the pot.
- 6Season with salt and pepper, then let the soup simmer for 20 minutes.
- 7Add the whole grain pasta to the pot and cook according to the package's instructions until al dente.
- 8During the last 5 minutes of cooking, add chopped kale to the soup.
