Ingredients
- 1.5 cups brown rice
- 3 cups vegetable broth
- 0.5 teaspoon saffron threads
- 2 tablespoons olive oil
- 1 large onion
- 1 large red bell peppers
- 3 cloves garlic
- 2 large tomatoes
- 1 cup chickpea
- 1 cup peas
- 1 cup artichoke heart quarters
- 1 for garnish lemon
- 1 cup parsley
Instructions
- 1Heat the vegetable broth and steep the saffron threads in it.
- 2In a large skillet or paella pan, heat the olive oil over medium heat.
- 3Add the chopped onion and bell pepper, cooking until softened.
- 4Stir in minced garlic and cook for another minute.
- 5Add the brown rice, stirring to coat with the oil and veggies.
- 6Pour in the saffron-infused broth, bring to a simmer, then reduce heat to low.
- 7Cover and cook for 35 minutes, or until the rice is almost tender.
- 8Add the chopped tomatoes, chickpeas, peas, and artichoke hearts, gently stirring.
- 9Cover and cook for another 10 minutes.
- 10Remove from heat and let it sit, covered, for 10 minutes to allow the flavors to meld.
- 11Garnish with lemon wedges and fresh parsley before serving.
- 12Serve directly from the pan for an authentic touch.
