- 0.25 cup brown rice flour
- 0.5 tsp salt
- 0.25 tsp black pepper
- 2 tbsp extra virgin olive oil
- 1 tbsp unsalted butter
- 1 tbsp garlic-infused oil
- 0.5 cup low-sodium chicken stock
- 0.25 cup lemon juice
- 2 tbsp capers
- 2 tbsp parsley
- 1 tsp thyme
- 1 lemon
- 1 tsp arrowroot powder
- 2 tbsp freshly grated parmesan cheese
Instructions
- 1Season pounded chicken cutlets with salt and pepper, then dredge lightly in brown rice flour, shaking off excess.
- 2Heat olive oil and butter in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown and cooked through; remove to a plate.
- 3Add Garlic-Infused Oil, chicken stock, lemon juice, capers, and fresh herbs to the skillet. Bring to a simmer, then whisk in arrowroot slurry to thicken the sauce slightly.
- 4Return chicken to the pan, turning to coat with the sauce. Serve immediately, garnished with fresh lemon slices and optional Parmesan cheese.
