Ingredients
- 1 cup wheat berries
- 2 medium cucumber
- 100 grams feta cheese
- 1 cup cherry tomatoes
- 0.25 cup red onion
- 0.5 cup parsley
- 3 tablespoons lemon juice
- 3 tablespoons olive oil
- 1 clove garlic
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.25 cup mint
Instructions
- 1Rinse wheat berries under cold water then soak overnight in plenty of water.
- 2Drain and transfer wheat berries to a pot. Cover with fresh water, bring to a boil, then reduce heat and simmer for 1 hour or until tender.
- 3Drain wheat berries and let them cool to room temperature.
- 4Dice cucumbers, crumble feta cheese, halve cherry tomatoes, finely chop red onion, and chop parsley and mint.
- 5In a large bowl, whisk together lemon juice, extra virgin olive oil, minced garlic, salt, and black pepper to create the dressing.
- 6Add the cooked wheat berries, diced cucumbers, cherry tomatoes, crumbled feta, chopped red onion, parsley, and mint to the dressing.
- 7Toss everything together until well combined.
- 8Adjust seasoning with salt and pepper to taste.
- 9Let the salad chill in the refrigerator for at least 30 minutes to allow flavors to meld.
- 10Serve chilled, garnished with additional herbs if desired.
