Ingredients

  • 1 pound pork sausage
  • 2 cups cannellini beans
  • 2 cups kale
  • 1 cup carrot
  • 1 cup celery
  • 1 cup onion
  • 2 cloves garlic
  • 6 cups vegetable broth
  • 1 cup tomatoes
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. 1Heat the olive oil in a large pot over medium heat.
  2. 2Add chopped onions, carrots, and celery; sauté until softened, about 5 minutes.
  3. 3Add minced garlic, thyme, and rosemary; cook for 1 minute until fragrant.
  4. 4Add the lean pork sausage to the pot, breaking it apart with a spoon; cook until browned.
  5. 5Pour in the low-sodium vegetable broth, diced tomatoes with their juice, and bring to a simmer.
  6. 6Stir in the cannellini beans and continue to simmer for 20 minutes.
  7. 7Add chopped kale to the pot and cook until the greens are tender, about 10 minutes.
