Ingredients
- 1 block extra firm tofu
- 0.25 cup extra virgin olive oil
- 2 tbsp lemon juice
- 3 cloves garlic
- 1 tsp oregano
- 0.5 tsp dried thyme
- 0.5 tsp rosemary
- 1 tsp kosher salt
- 0.5 tsp black pepper
- 1 red bell peppers
- 1 yellow bell pepper
- 1 medium zucchini
- 1 cup cherry tomatoes
- 0.5 medium red onion
- 1 can canned garbanzo beans
- 2 tbsp parsley
Instructions
- 1In a bowl, combine the cubed tofu with 2 tablespoons of extra virgin olive oil, lemon juice, minced garlic, dried oregano, dried thyme, dried rosemary, 1/2 teaspoon of kosher salt, and 1/4 teaspoon of black pepper. Stir well to coat and let marinate for at least 15 minutes.
- 2Preheat your oven to 400°F (200°C). On a large baking sheet, toss the chopped bell peppers, zucchini, halved cherry tomatoes, sliced red onion, and rinsed garbanzo beans with the remaining 2 tablespoons of extra virgin olive oil, 1/2 teaspoon of kosher salt, and 1/4 teaspoon of black pepper.
- 3Spread the seasoned vegetables in a single layer on the baking sheet. Add the marinated tofu cubes to the baking sheet, ensuring they are evenly distributed among the vegetables.
- 4Roast for 25-30 minutes, flipping all ingredients halfway through the cooking time, until the vegetables are tender and the tofu is golden and slightly crispy.
- 5Garnish with fresh chopped parsley just before serving.
