Ingredients
- 1.5 pounds skinless boneless chicken thighs
- 2 teaspoons oregano
- 1.5 teaspoons ground coriander seeds
- 1.5 teaspoons ground cumin
- 0.75 teaspoon ground nutmeg
- 1 teaspoon coarse salt
- 0.5 teaspoon cracked pepper
- 1 large white onion
- 0.33 cup lemon juice
- 0.25 cup extra virgin olive oil
- 2 teaspoons garlic
- 2 lemons
- 2 tablespoons parsley
- 1 teaspoon dried thyme
- 1 red bell pepper
- 0.5 cup cherry tomatoes
- 0.25 cup kalamata olives
- 0.25 cup feta cheese
Instructions
- 1In a small bowl, combine dried oregano, ground coriander seeds, ground cumin, ground nutmeg, and dried thyme to create the spice rub. In another bowl, whisk together lemon juice, extra virgin olive oil, and minced garlic for the marinade. Season the chicken thighs with coarse salt, cracked pepper, and the prepared spice rub.
- 2In a large bowl, combine the seasoned chicken, diced white onion, sliced red bell pepper, and halved cherry tomatoes. Pour the whisked marinade over the chicken and vegetables, tossing to coat evenly. Marinate at room temperature for 15-20 minutes, or refrigerate for a longer period if desired.
- 3Preheat a grill or griddle to medium-high heat. Briefly grill the halved lemons, cut-side down, until they are slightly charred, then remove them from the grill.
- 4Place the marinated chicken pieces and vegetables on the preheated grill or griddle. Grill for 6-8 minutes per side, turning once, or until the chicken is cooked through and reaches an internal temperature of 165°F.
- 5Serve the grilled chicken and vegetables immediately. Garnish generously with fresh chopped parsley, crumbled feta cheese, the grilled lemon halves, and pitted and halved Kalamata olives.
