Ingredients

  • 0.5 cup tequila
  • 2 chipotle peppers in adobo
  • 1 tbsp Adobo Sauce
  • 0.25 cup lime juice
  • 2 tbsp agave nectar
  • 0.25 cup extra virgin olive oil
  • 2 tbsp garlic-infused oil
  • 0.25 cup yellow onion
  • 1 tsp ground cumin
  • 1 tsp oregano
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 0.5 tsp white pepper
  • 1 tsp fresh ginger
  • 2 tbsp orange juice
  • 1 tsp lime rind

Instructions

  1. 1Combine Tequila, chipotle peppers in adobo with their sauce, lime juice, agave nectar, extra virgin olive oil, Garlic-Infused Oil, yellow onion, ground cumin, Oregano, smoked paprika, kosher salt, white pepper, Fresh Ginger, orange juice, and Lime Rind in a blender or food processor.
  2. 2Blend until the mixture is smooth and well combined, scraping down the sides as needed.
  3. 3Taste the marinade and adjust seasoning if desired.
  4. 4Use immediately to marinate plant-based protein or vegetables, allowing at least 30 minutes for flavors to meld, or up to 4 hours refrigerated for deeper infusion.
