Ingredients

  • 0.25 cup chia seeds
  • 1 cup almond milk
  • 0.5 cup blueberries
  • 0.5 cup strawberries
  • 1 each banana
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 4 each mint

Instructions

  1. 1In a bowl, mix the chia seeds with almond milk, maple syrup, and vanilla extract. Stir well until fully combined.
  2. 2Cover the bowl with a lid or plastic wrap and refrigerate for at least 4 hours, or overnight, allowing the chia seeds to swell and absorb the liquid.

  4. 4Prepare the fruits by washing the blueberries and strawberries. Hull and slice the strawberries.
  5. 5Peel and slice the banana.
  6. 6Divide the chia pudding into servings bowls.
  7. 7Top each bowl with an equal amount of blueberries, strawberries, and banana slices.
  8. 8Garnish with fresh mint leaves for a refreshing touch.
  9. 9Serve immediately for the best texture, or keep refrigerated until ready to serve.
